Up in vapor
The booming business of electronic cigarettes and vaporizers has started taking root in the Lake Minnetonka area. And while the state's nicotine tax has some e-cig shops looking to cut costs, the brainchild of North Shore Vape in Wayzata takes the quality over quantity approach.

Jimmy Huyen knows the industry, and is already seeing the vaporizer culture comes in all demographics.

"A lot of the older crowd thinks it's just kids trying out a new fad," Huyen said. "Honestly, I've been getting a huge variety of customers. People are just looking to get off cigarettes. They're looking for a healthier alternative."

Excelsior Brewing expansion, remodel nearly complete
If your business was not even two years old, you would probably feel pretty good about how things were going if you were already tripling the size of your establishment, hiring up to two dozen more employees and adding an apparatus that produced 2,500 units in one hour.

John Klick, owner and founder of Excelsior Brewing Co., is a happy man these days. He opened the business in July of 2012, and is in the midst of a $1.4 million major expansion and remodeling of the company that is located at 421 Third St.

"We are expecting to have our occupancy permit by May 1," Klick said.

The permit will be the result of going from 2,700 square feet in size to 8,500 square feet. This will result in more seating capacity, both in the tap room as well as the outside seating area.

However, the majority of the new space will be devoted to the brewing end of the business. When the remodeling is complete, the size of the brewing and bottling area will have doubled.

Lunds and Byerly's branches out with new 'Kitchen' concept
On March 6, Lunds Holding, Inc. opened its latest innovative project in Wayzata, a high-end grocery store and restaurant hybrid: The Lunds and Byerly's Kitchen.

The 17,000 square-foot space focuses on creating fresh dishes for both dine-in and take-out, included sushi, a hot food bar, made to order sandwiches, heat-to-serve entrees and a salad bar. The new space also includes a charcuterie, which offers cut-to-order Italian meats and a Caribou Coffee, the first in Minnesota to roast its coffee on-site.

The restaurant space serves everything from pub burgers and stone-oven pizzas to salads and a rotating selection of seasonal meats and seafood.

Wayzata businesses brace for uptick in tourism
As Wayzata's Lake Effect project continues to unfold, downtown restaurant and business owners are opening new locations and remodeling existing ones in preparation for the expected uptick in tourism.

"My opinion is that this is directly tied to the future of the Lake Effect redevelopment of downtown," Terri Huml, owner of Gianni's Steakhouse on East Lake Street, said of the opening and remodeling of several new eating establishments. "There's no way that a town of (a little over) 3,500 people can support 10 to 14 restaurants. So people are investing in Wayzata, and everyone is moving towards the anticipation of more visitors coming to Wayzata."

Boat dealers, marinas projecting a good 2014
Boats, marinas and skimming across Lake Minnetonka are probably far removed right now from the thoughts of most people as Minnesotans fight through another cold, snowy winter. But for the marinas, boat dealers and those whose profession revolves around watercraft, this is a busy time of year.

Boats are being sold, brought out of storage for servicing and owners are already vying for boat slips in which to dock their boats.

All this comes at a time when the boating industry is on the rebound as the economy continues to improve.

Dakota Junction sees foundation for success despite winter lull
It's no surprise that Mound, a city encompassing approximately 3.2 square miles on the western shore of Lake Minnetonka, has very few dining choices for the 9,000 residents that call Mound home.

As of October 2013, those choices have expanded to include Dakota Junction, a quaint bistro that sits on the edge of Dakota Rail Regional Trail.

Owners Matt and Stephanie Bolles have lived in Mound for 10 years and have seen the community evolve. When they saw an opportunity to open a restaurant near the new Walgreens, they took it.

Developing a new world of dishes
Located in a Tonka Bay mall, between Caribou Coffee and Heartbreaker, is Joey Nova's, a little pizzeria that is bursting at the seams with passion and a sense of purpose.

The man behind Joey Nova's, Gary Ezell, works 90-hour weeks, not only serving his customers quality food, but also continuing to research and develop new menu options for the restaurant.

Ezell has put more than 1,000 hours into offering the community the best of the best - including gluten-free, dairy-free and vegan options for his customers.

What's old is new again
Newly-opened Device Pitstop in Minnetonka is all about giving customers options.

Customers can come in with a broken device and can either get it fixed, sell it to the store or trade it in for a refurbished device. These devices include laptops, phones, tablets and desktop computers.

"Our goal is to provide a place for people to bring their electronics they're no longer using, still recoop some of that investment or that value, and maybe even trade that or apply that to a new machine," Dustin Brantford, general manager of Device Pitstop said. "And if they aren't bringing something in, we also want to have a lot of options for people that are affordable."

Italian-themed fine dining restaurant slated for site of old Bacon Drug
Mick Jagger once ate a meal at the spot where this spring, a new fine dining restaurant specializing in Italian cuisine will open.

It will be called Victor's on Water and it occupies a rather historically interesting building in downtown Excelsior. The home for several decades to Bacon Drug, it had a soda fountain. Jagger and the Rolling Stones were relatively unknown in the U.S. in the early 1960s and were touring in America. The had a gig at Big Reggie's Danceland, a dance and music hall located in the old Excelsior Amusement Park.

Jagger, in search of a meal, wound up at Bacon's.
