What is known as a "pop-up store" is now doing business at Ridgedale Center in Minnetonka, and its retail niche is designed to appeal to those who "like to hoist a few."
Local Brew opened on Friday, Nov. 22, and will remain open until mid-January.
"A pop-up store is a retail outlet that is only temporary," said Pady Regnier, the founder and CEO of St. Croix Promotions and Retail of Bloomington.
Local Brew appeals to people who like to drink beer and offers a variety of beer-themed apparel, mugs and glassware and even components for home brewing.
Local Brew is what Regnier labels a "beer gear" store.
Roughly 1,000 square feet in size, the Local Brew is situated on the second level of the mall at the east end of the main court next to Bar Louie, a bar franchise that has an expansive selection of beer. Monday, December 2, 2013
For some, retirement is a time of relaxation. For Blaze Driscoll, a year of semi-retirement was often times boring.
"Really it's kind of selfish on my part - I'm just sitting there by myself doing these things when I could be helping other people be productive," he said.
In his career, Driscoll has worked for Gold's Gym for 10 years designing and implementing programs for personal trainers, and has also worked as a comedic hypnotist. He earned his degree in psychology and social work.

How would you describe the offerings of Glen Lake Café?
It's a family-friendly café that uses locally-sourced ingredients when possible, cooked from scratch and offered at modest prices. We serve breakfast, lunch and dinner: Eggs, quiche, yogurt and fruit, waffles, salads, sandwiches, grass-fed burgers, tacos, soups. Small plates, flatbreads, seafood, entrées. We have a smart wine list and local craft beers on tap. We're also serious about great coffee and fresh baked goods.
What was your motivation in starting the business?
I fell in love the neighborhood after moving to the area in 2006. I saw a need for a café similar to my 318 Café in Excelsior. The Kraemer family also believed in the idea and worked with me to revive the little storefront in their family-owned Glen Lake Center, which was the former Glen Lake Bakery. So, I went for it! Medina Entertainment Center is investing an estimated $400,000 in exterior renovations, which include structural changes, trees, islands with new lights in the parking lot, banners and roof improvements.
"We're trying to give the outside of our building an update to reflect what's gone on inside the building after the remodel," Brian Raskov, one of the owners, said.
